Thanksgiving Vegetable Casserole

Northern's Culinary classes bake vegetable casseroles as a possible Thanksgiving side dish. Broccoli and Cheese Casserole displayed in video.

Culinary Arts I: Vegetable Casserole Recipes


Sweet Potato Casserole

40 oz. can sweet potatoes, drained and mashed with potato masher

Add:                2 eggs

                        ½ c. sugar

                        ½ t. cinnamon

                        ½ stick melted butter or margarine (melt in custard cup in microwave. 30 secs-1 minute)

Beat together and place in 9 inch square pan.

Top with:        1 cup (¾ of one roll) crushed Ritz crackers (crush in large closed plastic bag with rolling pin on a cutting board.

                        1 c. brown sugar

                        ½ c. chopped walnuts

                        1 stick melted butter or margarine

Mix together and sprinkle on top of sweet potato mixture. Bake at 350° for 30 min


Eggplant casserole

1 eggplant

2 eggs

2c. bread crumbs

1 jar spaghetti sauce

1 small ball mozzarella cheese, grated


Wash and peel eggplant. Slice into 3/8 inch slices. Dip eggplant in egg that has been

mixed with 1 T. water. Dip into bread crumbs. Fry both sides of eggplant in ¼ c.

oil over medium heat in Teflon-coated skillet. Alternate layers of sauce, eggplant

and cheese in square pan. Sprinkle with Parmesan cheese if desired. Bake at

375° for 30 min.


Green Bean Casserole

2-16 oz. cans green beans (drained)

¾ c. milk

1 can cream of chicken soup

1 1/3 c. French-fried onions

1/8 t. pepper


Combine all ingredients except 1 ½ c. French-Fried onions. Pour into a square

pan sprayed with PAM. Bake at 350 degrees for 30 minutes. Top with remaining

French-fried onions. Bake 5 minutes or until onions are golden brown.


Broccoli and Cheese Casserole

1- 16 oz. bag Frozen broccoli, thawed and drained

4 T. margarine

2 T. flour

½ c. milk

2 T. chopped onion

1-15 oz. jar Cheese Whiz

3 beaten eggs

½ roll of Ritz crackers crushed (in large closed plastic bag with rolling pin on

pastry board)


In a saucepan, combine margarine, four and milk. Cook until slightly thickened.

Stir in broccoli and onion. Mix Cheese Whiz and eggs and add to broccoli

mixture. Put in square pan sprayed with PAM. Top with cracker crumbs. Bake

At 350 degrees for 45 minutes.
